  • 8 ounces feta cheese, crumbled (1½ cups)
  • One 15 or 16 ounce container ricotta cheese (2 cups); part skim is fine
  • Two 10 ounce packages thawed frozen chopped spinach
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon salt
