1 large can of water packed tuna (thoroughly drained)
1 red onion, very finely minced
1/2 teaspoon salt (or to taste)
2 cups canola oil, for frying
2 large Idaho potatoes (boiled in their jackets)
2 Serrano chilies, minced
2 tablespoons chopped cilantro
3/4 cups all purpose flour
lots of freshly ground lemon pepper (I use the Trader Joe's peppermill variety)
