1 cup sun dried tomatoes in oil, well drained, and coarsely chopped
1 ½ teaspoon Kosher salt
1/2 cup grated Parmigiano Reggiano
1/4 cup chopped flat leaf parsley
10 or 12 Kalamata olives, pitted and halved
2 cups bread flour
2 medium yellow onions, cut on the vertical axis and then thinly sliced crosswise
2 tablespoons fruity olive oil
2 tablespoons honey
2 teaspoons active dry yeast
2/3 cup wheat germ
2/3 cups all purpose flour, plus up to another ¼ ½ cup for kneading
3 cloves garlic, peeled and thinly sliced
3 tablespoons capers
4 ounces chorizo, cut into 1/2 inch dice
4 ounces fresh basil leaves (1 cup after chopping coarsely)
Freshly ground pepper
Pinch of sugar
¼ teaspoon baking soda (to counteract acidity in the wine, which could affect the yeast)
½ cup grated Manchego or Iberico cheese
¾ cup red wine
