2 two ounce good quality Spanish chorizo sausages, cut into 1/2 inch thick slices
4 small waxy potatoes, scrubbed and cut into chunks
6 large free range or organic eggs
A bunch of fresh flat leaf parsley, leaves picked
Extra virgin olive oil
Juice of 1 lemon
Sea salt and freshly ground black pepper
