1 pinch sea salt, to taste
1 tablespoon mayonnaise
1 2 pound lobster, steamed
2 handfuls baby spinach, or other mild greens
2 4 splashes olive oil
2 4 sprigs french tarragon, half leaves picked, half coarsely chopped
2 4 sprigs mint, chiffonade
