  • 1 cup or more buttermilk.
  • 1 egg, lightly beaten
  • 1/2 cup diced onion
  • 1/2 cup toasted pecans, chopped
  • 1/2 teaspoon salt
  • 1/3 cup finely diced carrot
  • 1/4 cup finely diced celery
  • 1/4 teaspoon baking soda
  • 2 tablespoons Canola oil or solid shortening
  • 4 slices of stale sandwich bread
  • Chicken or vegetable stock
  • Drained oysters (optional)
  • Slivers of country ham or crumbled cooked sausage or crumbled cooked bacon, to taste (optional)
  • Substitute or add fennel for celery
  • Substitute or add leeks for onion
