Curry Chicken, Kale and Green Apple Manapua

1 1/4 pound chicken breast, cut into pea sized pieces (easiest if partially frozen)
1 cup 1% milk
1 large egg combined with a splash of water and pinch of salt for egg wash (not necessary if steaming)
1 packet active dry yeast
1 tablespoon extra virgin olive oil
1 tablespoon tamari
1 teaspoon sesame oil for greasing bowl
1/2 cup small dice Granny Smith apple
1/2 teaspoon apple cider vinegar
1/2 teaspoon salt
1/3 cup warm water
1/4 cup all vegetable shortening (I used Spectrum brand)
2 cups finely chopped kale
2 garlic cloves, finely chopped
2 large scallions, finely sliced
2 tablespoons cornstarch
2 tablespoons honey
2 tablespoons sugar
2 teaspoons curry powder
3 1/2 cups all purpose flour, divided (plus more if dough is extra sticky)
3/4 teaspoons Chinese five spice powder
