1 tablespoon brown sugar
1/2 cup water
1/2 pound small red plums, grand rosa would be nice, pits removed
1/4 cup cider vinegar
2 tablespoons tomato sauce
2 teaspoons garlic, minced
3 tablespoons honey, a light variety prefered
3/4 cups yellow onion, minced
4 double cut Frenched venison chops
6 guajillo chiles, (these are dried) stems removed and seed, then cut into thin strips
Kosher salt and fresh ground pepper
