  • 2 tart apples, such as Northern Spy or Granny Smith, sliced 1/2 inch thick (cores reserved)
  • 2 teaspoons coarsely chopped fresh thyme
  • 4 tablespoons unsalted butter, softened
  • Coarse salt and freshly ground pepper
