1/2 cup blanched almonds
1/2 tablespoon Meyer's lemon zest
1/2 tablespoon orange zest
1/4 cup honey
1/4 lemon
2/3 cups light brown sugar
3 egg yolks
3 green cardamom pods
3 ounces unsalted butter
4 large fruits, a combination of tart apples, pears and/or peaches
garnish with cardamom honey flavored Greek yogurt, if you like
optional fresh mango slices for accents, without poaching
pinch of sea salt
