100g/3½oz parmesan, or similar vegetarian hard cheese, freshly grated
150g/5oz plain flour, plus extra for flouring
2 free range eggs
2 garlic cloves, chopped
2 tbsp extra virgin olive oil
2 tbsp tomato purée
2 x 400g/14oz cans chopped tomatoes
250g/9oz ricotta cheese
500g/1lb 2oz frozen spinach, thawed, or 650g/1lb 7oz fresh spinach, cooked until wilting
freshly grated nutmeg
salt and freshly ground black pepper
