1 1/2 cups club soda
1/2 tsp. baking powder
1/2 tsp. baking soda
2 cups semolina flour
2 eggs, lightly beaten
2 sweet onions, such as Walla Walla, about 1 1/2 lb. total, cut into 1/4 inch rings
2 Tbs. cornstarch
2 Tbs. olive oil
2 tsp. sugar
5 cups canola oil
6 flat iron steaks, each 7 to 8 oz.
6 Tbs. vegetable oil
Creamy truffled spinach for serving (see related recipe at left)
Kosher salt and freshly ground pepper, to taste
Kosher salt, to taste, plus 2 tsp.
Sea salt for sprinkling
