Homemade Lamb Sausages with Rosemary, Sun-Dried Tomatoes and Feta

(Optional) pinch or two dried, red pepper flakes
1 pound ground lamb
1 tablespoon (heaping) freshly minced rosemary, needles only, no stems (stems can puncture the plastic bag when forming the sausage)
1 tablespoon olive oil
1 teaspoon (heaping) minced or pressed garlic
1/2 teaspoon dried thyme flakes, crushed
2 3 tablespoons Feta cheese crumbles
4 sun dried tomato halves, soaked in hot water until plump, drained and chopped
Salt and pepper to taste
Zest from 1/2 lemon
