1 medium yellow onion, unpeeled and chopped

1 tablespoon black peppercorns
1 tablespoon extra virgin olive oil
1/2 cup honey
1/2 small onion, peeled and cut in half
1/3 cup canola oil
1/4 cup flat leaf parsley, finely chopped
1/4 cup flour
3 sprigs fresh thyme, leaves removed and finely chopped
3 tablespoons unsalted butter, at room temperature
3/4 cup kosher salt
32 ounces low sodium chicken broth
4 cups water
6 to 8 sprigs fresh rosemary
