Hurricane Irene Special - Tarragon White Wine Chicken with Goat Cheese Pasta

Ingredients in this Recipe

  • 1 small yellow onion, chopped (I used a "Candy Onion" from Union Square Farmer's Market. Delicious.)
  • 1/2 cup Boucheron goat" itemprop="name">goat's Cheese (or any soft goat" itemprop="name">goat's cheese, but this one is extra creamy.)
  • 1/4 teaspoon sea salt
  • 2 cloves garlic, minced
  • 2 skinless, boneless breasts of chicken, washed and dried.
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white wine of your fancy
  • 3 cups cooked Rice" itemprop="name">Rice pasta shells (I used Organ Garlic and Parsley Rice" itemprop="name">Rice Pasta, available online or at health food stores.)
  • 3 tablespoons chopped fresh tarragon
