Jamaican Chicken Curry

1 garlic clove, minced
1 medium onion, chopped
1 package (10 ounces) frozen peas, thawed
1 teaspoon ground cumin
1/2 teaspoon dried thyme
2 tablespoons vegetable oil
3 tablespoons curry powder (preferably Jamaican)
4 bone in, skinless chicken breast halves (10 to 12 ounces each), halved crosswise
4 carrots, thinly sliced
Coarse salt and ground pepper
