Just Spicy Enough Black Bean and Yam Chili

1 large red bell pepper, chopped
1 large red onion, chopped
1 large yam (approximately 3.5 c) cut into half inch cubes
1 tablespoon ancho chili powder
1 tablespoon chipotle powder
2 teaspoons cayenne pepper
2 teaspoons cumin
3 cloves of garlic, minced
30 ounces fire roasted diced tomatoes
5 cups dry black beans, soaked and then cooked until tender
6 cups vegetable stock
8 ounces dark ale (a coffee porter or stout would do nicely)
salt to taste
