  • 1 loaf of crusty sourdough bread or ciabatta
  • 1/2 cup cooked cannelini or other white beans
  • 1/2 cup olives, pitted and sliced (your favorite variety)
  • 1/4 red onion, very thinly sliced
  • 2 hardboiled eggs, sliced
  • 2 very ripe, large, juicy tomatoes, any variety except Roma
  • a handful fresh basil and mint leaves
  • salt and pepper to taste
