1 pound assorted mushrooms
1 tablespoon dijon mustard
1 tablespoon finely chopped fresh rosemary and thyme
1 tablespoon flour
1 tablespoon worcestershire sauce
2 cloves garlic, finely minced
2 tablespoons olive oil
2 tablespoons tomato paste
2 tablespoons unsalted butter
4 pounds equal parts ground pork, veal and beef
salt and pepper (about 1 1/2 teaspoons of each)
