Ingredients in this Recipe

1 bunch fresh cilantro
1 bunch fresh parsley (flat leaf is best)
1/2 bunch fresh mint (optional)
1/4 cup (or to taste) extra virgin olive oil
2 cups pine nuts (or raw cashew pieces)
Crimini mushrooms (quantity depends on size of mushrooms and herb bunches; this recipe should fill at least a dozen 2 2 1/2" diameter mushrooms)
Cumin seeds or powder
Fresh garlic cloves, peeled (optional)
Fresh ground black pepper
Juice of 2 good sized limes (or lemons)
Sea salt
