  • 1 cup extra virgin olive oil
  • 1/2 cup coarsely chopped garlic (about 2   large heads)
  • 1/2 tsp. salt, plus more, to taste
  • 2 canned chipotle chilies en adobo, seeded and   cut into thin strips
  • 2 lb. medium large shrimp, peeled and   deveined
  • 2 limes, cut into wedges
  • 3 Tbs. chopped fresh cilantro or flat leaf parsley
  • Juice of 1 lime
