1 whole chicken carcass, with chicken reserved, some skin removed, and carcass cut into pieces
1 whole head of garlic
1/2 cup tiny elbow pasta
1/2 teaspoon freshly ground black pepper
10 cups water
2 4 inch pieces of fresh baguette, sliced in half
2 onions, peeled and roughly chopped
2 tablespoons finely chopped chives
3 tablespoons fresh thyme, stems roughly chopped
4 cloves of raw garlic, peeled and thinly sliced
4 cups garlic onion chicken broth
4 tablespoons olive oil, divided
4 thick slices of room temperature Brie
