1 tsp cumin seeds
15g/½oz root ginger, peeled, finely chopped
2 tbsp chopped fresh coriander
2 tbsp vegetable oil
2 tsp coriander seeds
2 tsp freshly squeezed lime juice
25g/1oz roasted peanuts, finely chopped
3 tbsp fish sauce
750g/1½lb medium sized squid (pouches about 18cm/7in long), cleaned, quills and beaks removed
7g/¼oz garlic, peeled, finely chopped
