100g butter
150g frozen peas
6 rashers of pancetta or thinly sliced bacon, the best quality you can afford
8 fresh scallops, removed from the shell and trimmed
a bunch of asparagus
a small bunch of mint, leaves picked
a small handful of wild rocket leaves
olive oil
sea salt and freshly ground black pepper
zest of 1 lemon
