1 tablespoon dried oregano
2 cloves of garlic,
200ml natural yoghurt
4 sprigs of fresh mint,
8 flatbreads, to serve
800g leg of pork, shin
a large cucumber
a pinch of sea salt
a small bunch of fresh dill,
For the tzatziki
Greek extra virgin olive oil
ground black pepper
juice of 1 lemon
red wine vinegar
wine vinegar
