1 ounce pecorino cheese, shaved
1 tablespoon chopped fresh chives
1/4 cup extra virgin olive oil
2 green onions, minced
2 tablespoons chopped fresh mint, plus more for garnish
3 tablespoons white wine vinegar
Freshly ground pepper, to taste
Sea salt, to taste
Zest and juice of 1 small lemon (about 1 teaspoon zest and 2 1/2 tablespoons juice)
