Tangy Spinach Souffle

Ingredients in this Recipe

  • 1 clove garlic, put through garlic press
  • 1 cup plain yogurt
  • 1 pinch kosher salt
  • 1 pound spinach, stems trimmed, steamed and roughly chopped. (or if, like me, you're short on time, you can use one 10 ounce package of organic frozen spinach, defrosted and well drained. )
  • 1 tablespoon panko bread crumbs
  • 1/2 cup finely grated parmesan cheese, plus more for sprinkling on the dish and on top (optional)
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh)
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon salt
  • 4 egg whites
  • 4 tablespoons butter
  • 4 tablespoons flour
  • juice of 1/2 lemon (about 2 tablespoons)
  • zest of one lemon
