1 pumpkin (about 1 kg)
1 red onion, peeled and finely chopped
2 cloves of garlic, peeled
2 sprigs of fresh rosemary, leaves finely chopped
200ml vegetable stock, preferably organic
50g basmati rice, washed and drained
50g shelled pistachio nuts
75g dried cranberries
a small handful of black olives, stoned and chopped
olive oil
sea salt and freshly ground black pepper
teaspoon ground cinnamon
teaspoon ground nutmeg
zest of 1 tangerine
