• 2 teaspoons lemon or orange zest
• 2 teaspoons lemon zest
• 3/4 cup whole milk ricotta, drained
• 4 (5by 5 inches) Puff pastry squares
• 4 scallions, only the green part, chopped
• Confectioners’ sugar for dusting the tops
• Pinch of coarse salt
• Sesame seeds, toasted, for the top
