"What's Up Doc?" Carrot Vichyssoise

Ingredients in this Recipe

  • 1 cara cara orange, juiced
  • 1 cup sliced leeks, white part only, washed to remove any grit
  • 1 cup sliced onion
  • 1 quarter sized piece of crystallized ginger, chopped
  • 1 teaspoon kosher salt
  • 2 cups peeled and sliced skinny carrots (the kind Bugs used to nibble on)
  • 3 cups peeled and sliced potatoes
  • 3/4 cup zero fat Greek style yogurt (you can add more if you like it thicker, or you can thin the soup after adding the yogurt with milk, if you prefer)
  • 5 cups water
  • chopped chives and/or pickled ginger to garnish
