1 cup salsa (my favorite is Green Mtn. Gringo)
1 tablespoon olive oil
1 teaspoon cumin
1 2 tablespoon fresh cilantro
1/2 1 cup sour cream
1/2 1 teaspoon cayenne pepper
1/4 cup low sodium soy sauce
2 cups cheddar cheese, grated
2 leeks, thinly sliced
4 garlic cloves, finely chopped
5 cups butternut squash, peeled & cubed
6 large whole wheat tortilas
