1 yellow onion, diced
1/3 cup dry sherry
1/3 cup thinly sliced green onions
1/4 tsp. cayenne pepper
12 oz. coarsely shredded cooked chicken (see related recipes at right)
2 cups mashed potatoes
2 garlic cloves, chopped
2 Tbs. minced fresh flat leaf parsley
2 Tbs. minced fresh thyme
2 Tbs. unsalted butter
3 Tbs. all purpose flour, plus more for dusting
Canola oil for frying
Salt and freshly ground black pepper, to taste
