1 cup crumbled queso fresco
1/4 cup coarsely chopped fresh cilantro
1/4 lb. fresh chorizo sausage, casings removed
4 green onions, white and pale green parts only, very thinly sliced
4 tsp. canola oil, or as needed, for frying
8 flour tortillas, each about 8 inches in diameter
