1 large onion (about 12 ounces), chopped
1 pint shucked small oysters, with their liquor
1 recipe Cracked Pepper Corn Bread (recipe follows)
1 tablespoon fresh thyme leaves
1 tablespoon sugar
1½ teaspoons baking soda
1½ teaspoons salt
2 large eggs, lightly beaten
2 tablespoons minced fresh sage
2 teaspoons coarsely cracked black peppercorns (see Note)
2/3 cup minced fresh parsley
3 tablespoons rendered bacon fat or butter, melted
4 large ribs celery, chopped
4 tablespoons unsalted butter
Vegetable oil cooking spray
½ cup Chicken Stock or canned low sodium chicken broth
