1 apple, roughly chopped Garnish
1 cup maple syrup
1 large Savoy cabbage, cut into a 1⁄4 inch chiffonade
1 pint heavy cream
1 tablespoon butter
1 tablespoon coriander seed
1 tablespoon freshly grated horseradish
1 tablespoon olive oil
12 sprigs thyme
2 fresh Thai chilies, lightly crushed
2 heads garlic, cut in half crosswise
2 large onions, quartered
2 radishes, thinly sliced Instructions
3 carrots, halved lengthwise and cut into 4 inch pieces
3 stalks celery, cut into 4 inch pieces
4 cloves garlic, smashed
4 tablespoons white wine vinegar
4 inch knob ginger, peeled, roughly chopped, and smashed
6 scallions, trimmed
8–9 cups chicken stock
Handful of crushed parsley stems
Sea salt and freshly ground black pepper
