1 Tbs. finely minced garlic
1/2 cup freshly grated or prepared horseradish
1/4 cup olive oil
2 large carrots, chopped
3 celery stalks, chopped
3/4 cup heavy cream
4 fresh thyme sprigs plus 1 tsp. chopped fresh thyme
5 cups beef stock
Juice of 1 lemon
Salt and freshly ground pepper, to taste
