100ml creme de cassis or other berry liqueur (I used cassis/blackcurrant cordial)
150g caster sugar
6 gelatine leaves
750ml Champagne or sparkling wine (I used Moscato)
Black caviar (I didn't use beluga.....)
White chocolate shavings (recipe below)
