Prawn and watermelon salad

100g unsalted cashews
12 raw prawns, peeled
2 handfuls of baby spinach
4 spring onions, finely sliced
400g piece of watermelon, seeds removed, cut into chunks
a small bunch of mint
sea salt and freshly ground black pepper
sesame oil
zest and juice of 2 limes
